How to make yummy, easy pasta from scratch!

You can’t buy pasta for love nor money currently and it’s easy to get sucked into the hysteria of panic buying when you witness everyone else doing it. Why not look after your wallet, your mental health and be kind to those less fortunate by making your own pasta and leaving the packet stuff on the shelves for those who need it?

Fresh pasta is so simple to make! You only need 4 ingredients that are all very easy to source. Once you have the basic recipe down you are then free to experiment with shapes, flavours and fillings. A great activity to do with kids or by yourself!

Plus, the process of creating fresh pasta does wonders to your wellbeing, too. You are giving yourself time to be present and mindful, away from the stress of news and social media. Plus, you know exactly what you are putting in your food, giving you the opportunity to properly nourish yourself. Everyone’s a winner!

Basic Pasta

The easiest shape to make at first is flat spaghetti.

Ingredients
Serves: 3 

  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 140g plain flour
  • 2 tablespoons water

Method
Prep: 10min  ›  Cook: 3min  ›  Extra time: 17min  ›  Ready in: 30min 

  1. In a medium-sized bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. The mixture should form a stiff dough. If needed, stir in 1 to 2 tablespoons water.
  2. On a lightly floured surface, knead the dough for about 3 to 4 minutes. With a pasta machine or by hand roll the dough out to desired thickness. Use machine or knife to cut into strips of the desired width.

To cook fresh pasta…

Bring a large pot of lightly salted water to the boil. Add the pasta, and cook for 2 to 3 minutes. Fresh pasta cooks very quickly. It will float to the surface when fully cooked. Drain, and use as desired.

Want to get creative? Try adding spinach to the mixture for a green, super healthy alternative. 

Vegan? Just take out the egg and replace with a few teaspoons of oil if the mixture doesn’t incorporate properly.

Experiment with different shapes and even add fillings!
